Jiffy Nutmeg Cake — A One-bowl Cake

Ingrients & Directions


2 c All-Purpose Flour — sifted
1 1/2 c Sugar
1 ts Salt
2 ts Baking Powder
1 1/2 c Heavy Cream
3 Eggs
2 ts Nutmeg — grated
2 tb Dark Rum Or Brandy

Preheat oven to 350 F. Sift flour, sugar, salt, and baking powder
into a mixing bowl. Add cream, eggs, and nutmeg, and beat for 3 mins.
Add rum or brandy and beat for 1 min longer. Then pour into a greased
and floured 9 x 5 x 3-inch loaf pan and bake for 1 hour, or until a
toothpick inserted in center comes out clean. Cool on cake racks and
frost or enjoy plain.

Yield: 10 servings.
