Basil Cornbread

Ingrients & Directions


1 c Cornmeal
1 c Unbleached flour
2 tb Granulated sugar
4 ts Baking powder
3/4 ts Salt
1/4 ts Black pepper
1 Egg white — whipped
1 c Skim milk — at room
Temperature
1/4 c Applesauce — at room
Temperature
3 tb Basil

Preheat oven at 350. Prepare a 8″ square baking pan with cooking
spray and flour. In a mixing bowl, combine cornmeal. flour, sugar,
baking powder, salt, and pepper. In another mixing bowl, combine egg
white, milk, applesauce, and basil. Mix dry ingredients with wet
ingredients just until moistened. Spread batter into prepared pan.
Bake for 18 to 22 minutes, or until top is light golden.
