Ingrients & Directions
1 1/2 cups cooked yams or sweet — potatoes — puree
1 1/4 cups sugar 1/2 cup butter or margarine — melt
1/4 cup evaporated skim milk
3 eggs
1 teaspoon ground nutmeg
1 teaspoon vanilla
3/4 teaspoon lemon extract 1 9″ unbaked deep-dish pie — shell
Preheat oven to 350~. In processor combine all ingredients except crust.
Process until well-blended. Pour into unbaked pie shell. Bake for 50 to 55
minutes or until knife inserted in center comes out clean and pie is
golden-brown.
