3 tb Diet margarine; melt
2/3 c Graham cracker crumbs
2 ts Sugar
15 oz Low-fat ricotta
3 Eggs
2 tb Skim milk
1 tb Grated lemon rind
1 tb Rum extract or rum
4 pk Sweet ‘n Low
2 tb Almonds; slice/blanch
4 Cherries; chop
1 tb Dark raisins
Make crust of crumbs and margarine. Put in pan. Bake in 375~ oven for 7
minutes or until crisp. Put ricotta in bowl; add eggs. Mix and add milk,
sugar and rum extract. Blend well. Pour over crust. Sprinkle almonds,
cherries and raisins over top. Bake at 375~ for 30 minutes.
