1/2 c Water
2 1/2 c White bread flour
1/2 c Rye flour
2 tb Dry milk
1 1/2 ts Salt
2 tb Butter
1 tb Honey
1 tb Molasses
3/4 c Flat ale
1/2 ts Cardamom
1/2 ts Anise seed
1 tb Orange peel
2 ts Yeast, fast rise or machine

This rich but light rye is the cornerstone of a traditional Swedish
breakfast. The anise and orange peel add just a kiss of flavor to
complement the rye. Nice with a slice of cheese, a soft-boiled egg
in an egg cup and a cup of strong black coffee!

You can produce flat ale by opening a dark beer and stirring until the
bubbles disperse. Scoop off residual foam before measuring ale.
