1 c Sugar 1 1/2 ts Lemon peel
1/4 c Cornstarch 6 dr Green food coloring
1 1/2 c Water 1 ea 9 inch pie shell
3 ea Eggs — yolks beaten Meringue:
1/4 c Lemon juice 3 ea Egg white
1 tb Butter or margarine 1/3 c Sugar
Combine sugar, cornstarch and water in a saucepan; stir until smooth.
Bring to boil, stirring constantly. boil 2 min. or until thickened.
Stir a small amount into egg yolks; return all to the pan. Cook and
stir 1 min. Remove from heat; stir in lemon juice, butter, lemon peel
and food coloring until smooth. Pour into crust. For meringue, beat
egg whites until foamy. gradually add sugar and beat until stiff
peaks form.
