1 3/4 c All-purpose flour
1 1/2 c Sugar
1 ts Baking soda
1/2 ts Salt
2 Eggs
2 Ripe medium bananas; mashed
-(1 cup)
1/2 c Vegetable oil
1/4 c Plus 1 Tablespoon buttermilk
1 ts Vanilla extract
1 c Chopped walnuts; (optional)
In a large bowl, stir together flour, sugar, baking soda and salt. In
another mixing bowl, combine eggs, bananas, oil, buttermilk, and vanilla;
add to flour mixture, stirring just until combined. Fold in nuts. Pour into
a greased 9in. x 3in. baking pan. Bake at 325 for 1 hour and 20 minutes or
until bread teasts done. Cool on wire rack. Yieald: 1 loaf.
