1 c Cooked rice; cooled
1 c Sugar
4 Beaten eggs
1 lb (2 c.) Ricotta cheese
1 c Milk
1 ts Vanilla
Cinnamon to taste
1 9-inch pie shell
Prepare pie crust, or if not using crust grease Pyrex dish. Beat Ricotta
cheese and eggs. Add the rest of ingredients except cinnamon. Pour into
baking dish. Sprinkle with cinnamon. Bake at 350 degrees for 1 hour.
