Herbed Peasant Bread – Bon Appetit

Ingrients & Directions


3 tb Minced fresh herbs (such
-as chives, parsley, basil,
-marjoram and/or sage)
3 tb Olive oil
4 lg Slices dense crusty bread
-(about 1/2 to 3/4 inch
-thick)
2 tb Freshly grated Parmesan
-cheese

Combine herbs and oil in small bowl. Let stand 15 minutes.

Preheat broiler. Place bread on baking sheet. Brush bread lightly
with half of herb oil. Broil until bread is just beginning to color,
watching closely so that bread doesn’t burn, about 3 minutes. Turn
bread over and brush with remaining herb oil, distributing herbs
equally. Sprinkle with grated Parmesan cheese. Broil until cheese
topping is golden brown, watching closely so that bread doesn’t burn,
about 3 minutes.

Serve bread warm.
