3/4 c Granulated sugar
3 tb Water
4 tb Unsalted butter
8 Medium-sized pears
Pate brisee; or puff pastry
1. Preheat the oven to 375 F.
2. Place the sugar and water in a 9-inch cast-iron skillet, and cook until
amber-colored.
3. Remove from the heat and stir in the butter.
4. Halve and core the apples and place on top of the caramel, cut-side-up.
5. Roll the paste brisee out to 1/8-inch thickness, and place it over the
apples.
6. Trim the edges to the outer rim of the skillet.
7. Bake for 20 minutes or until the pastry is golden brown.
8. Let cool on a rack for 15-20 minutes, then loosen the pastry from the
pan using a sharp knife.
9. Place a serving dish or platter over the tart and quickly invert.
