Bread And Tomato Salad

Ingrients & Directions


1/2 sm Stale and hard french
-bread-stick
4 Extra-large tomatoes; sliced
-thickly
1 lg Onion or 6 spring onions;
-chopped coarsely
1/2 lg Or 2 small cucumbers; peeled
-and diced
A handful of fresh basil
-leaves; shredded
A large pinch of dried
-oregano
6 tb Olive oil; (6 to 8)
1 tb Red wine vinegar; (1 to 3)
Salt and pepper

Roughly break up the bread and put it in a bowl. Cover with cold
water and leave to soak for about 45 minutes, or until the bread is
soaked through. Remove the bread from the water and squeeze it hard
with your hands to press out as much water as possible.

Arrange the bread in the bottom of a salad bowl and scatter the
tomatoes, onion, cucumber and basil over the top. Mix together. Mix
the oregano, olive oil, vinegar, salt and pepper and sprinkle over
the top. Toss very thoroughly, then leave the salad to stand for
about 20 minutes before serving.
