Carrot Nut Bread

Ingrients & Directions


1 c Sugar
1/2 c Oil
1 1/2 c Grated carrots ***
1/4 c Nuts
1 ts Vanilla
1 1/2 c Flour
1 ts Cinnamon
1 ts Baking soda
2 Eggs
1/2 ts Salt

*** Substitute mashed bananas for a moist banana bread.

Preheat oven to 350. Mix sugar and oil. Add eggs and vanilla. Mix dry
ingredients. Add to sugar mixture. Stir in carrots and nuts. Bake 1
hour.
