Mock Banana Nut Bread – Butter Busters ^

Ingrients & Directions


2 c Flour or bread flour 1/2 c Buttermilk**
1 t Baking soda 1/2 c Egg Beaters
1/2 t Lite salt, optional 1 t Vanilla
1 c Sugar* 3 sm (to4)mashed ripe bananas
1/2 c Liquid Butter buds or 1 c Grape nuts cereal
-Promise Ultra fatfree *Or 1/2 c sugar and 6
-margarine -packets S&L

*or 1/2 cup skim milk and 1 teaspoon lemon juice Mix all ingredients
except bananas and cereal with a hand mixer. Beat until smooth. fold
bananas and cereal in. Spray two loaf pans with Pam. Pour batter in
and bake at 300F about an hour or until golden brown. Per sugar
serving: 114 cal., 0.4g fat (3%), pmg chol., 1g fiber, 3g pro., 25g
carb., 119mg sod. Per S&L serving: 99 cal., 21g carb. Butter Busters
