1 1/2 Stick butter
1 1/2 c Sugar
3 c Sifted cake flour
1 ts Cinnamon
1 ts Allspice
1 ts Cloves
1 1/2 c Buttermilk; at room
-temperature
1 1/2 ts Baking soda
1 1/3 c Chopped pecans
1 1/2 c Raisins
Grease a 9×13 pan or 3 (8 inch) pans. Preheat oven to 350. Cream butter
and sugar together. Sift flour with spices. Add soda and dissolve in
buttermilk. (Do not do this too early as the buttermilk expands.)
Alternately add the buttermilk mixture and flour mixture to creamed butter,
mixing well as you go. Add pecans and raisins. Bake at 350 for 25 minutes.
Serve with Penuche Frosting (see recipe). Calories: 309 per serving. Yield:
18 servings.
