2 c Flour
1 tb Sugar
1 1/2 ts Baking powder
1 ts Baking soda
3 tb Butter
2 Eggs
2 c Buttermilk (can use some
-plain yogurt for part of
-the buttermilk)
These are delightfully fluffy.
Combine the flour, sugar, baking powder, and baking soda. Melt the
butter, cool slightly, then beat in the eggs. Add the buttermilk to the egg
mixture and blend well. Pour the liquid into the dry mixture. Mix sparingly
until just barely combined. The batter will be thick. Heat a nonstick
griddle. Drop large spoonfuls of the batter onto the hot griddle. Fry until
brown on the bottom, flip, then brown the other side.
Good with a topping of: 2 large apples (peeled, cored, and sliced) sauteed
in a little butter and water with cinnamon and brown sugar.
