Ingrients & Directions
3 Eggs
3/4 c Oil
2 c Sugar
2 c Raw zucchini
2 c Flour
1 c Chopped nuts
1/4 ts Baking powder
2 ts Baking soda
1 ts Salt
3 ts Cinnamon
1 ts Nutmeg
3 ts Vanilla
Beat eggs, add sugar, oil and zucchini. In separate bowl add al dry
ingredients and sift into sugar mixture. Add vanilla and nuts. Pour
into 2 greased loaf pans and bake 45 minutes at 350 . (Fills 3 mini
pans – bake same length of time).
