Ingrients & Directions


3/4 c Cornmeal
1 1/2 c Flour
1/4 c Sugar
1 1/2 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
1 c Cheddar cheese – grated
2 ts Jalepena chiles – diced
1 c Corn kernels
3 tb Cilantro – chopped
1 c Buttermilk
2 Eggs
4 tb Butter – melted

Directions: Preheat oven to 400 degrees. In a large bowl, combine
first 10 ingredients (cornmeal thru cilantro). In a separate bowl,
whisk together liquids and slowly stir in dry ingredients until well
combined. Spray muffin pan or 8×8 baking pan with vegetable spray and
pour in batter. Bake for 20-25 minutes or until golden.
