Cranberry Bread

Ingrients & Directions


2 c Whole wheat flour 3 ea Egg whites
2 ea Oranges 2 c Sugar or less
2 c Unbleached white flour 1/2 c Chopped nuts
1 ts Baking soda 1/4 c Canola oil
1 ts Baking powder 2 c Cranberries,ground or sliced

Preheat oven to 325. Grate the rind of the oranges and reserve. Cut
oranges in half and squeeze out the juice. Add enough boiling water to
juice to make 1 1/2 cups liquid. Combine juice and rind with all other
ingredients. Place in two lightly oiled 9-by5-inch loaf pans. Bake for 1
hour or until wooden pick inserted in center comes out clean.
