Whole Grain Bread Mix

Ingrients & Directions


1 1/2 c Flour 2 tb Unprocessed bran
1/2 c Whole wheat flour 2 tb Packed brown sugar
1/4 c Old-fashioned oats 1 ts Salt
2 tb Yellow cornmeal 1 pk Quick-rise dry yeast
2 tb Wheat germ

Combine all ingredients in a large bowl; stir until well blended.
Store in

an airtight container in a cool place. Give with baking instructions.
Yield: about 2 – 1/2 cups bread mix, makes 1 loaf bread. To bake
bread: Place mix in a large bowl. In a small saucepan, heat 1 cup
milk and 2 T. oil until very warm (120 to 130). Add to bread mix;
stir until a soft dough forms. Turn onto a lightly floured surface
and knead 5 minutes or until dough becomes smooth and elastic. Cover
and allow dough to rest 10 minutes. Shape dough into a loaf and place
in greased 4 x 8 inch loaf pan. Spray top of dough with cooking
spray, cover and let rise in a warm place (80 to 85) 50 minutes or
until doubled in size. Preheat oven to 375. Brush top of loaf with a
beaten egg. Bake 25 to 30 minutes or until bread is golden brown and
sounds hollow when tapped. Serve warm or transfer to wire rack to
cool completely. Store in an airtight container.
