1/2 c Sliced green onions
2 cl Garlic; finely chopped
1 tb Margarine
10 oz Frozen chopped spinach;
-thawed & drained
1/2 c Creamed cottage cheese
1/2 c Bisquick
1 c Milk
3 Eggs
1 ts Lemon juice
1/4 ts Pepper
3 tb Grated Parmesan cheese
1/4 ts Ground nutmeg
Heat oven to 350~. In large skillet over medium heat cook onions and
garlic in margarine 2-3 minutes or until onions are transparent. Stir
in spinach. In greased 9″ pie plate layer spinach mixture and cottage
cheese. In medium bowl stir baking mix, milk, eggs, lemon juice and
pepper with fork until blended: pour into pie plate. Sprinkle with
Parmesan cheese and nutmeg. Bake about 35 minutes or until knife
inserted in center comes out clean. Cool 5 minutes. Serve.
** High altitude: Bake 35-40 minutes.
