Red And Green Tomato Pie

Ingrients & Directions


1 Standard Pastry for one 1/8 ts Pepper
Crust pie (Not deep dish) 1/3 c Mayonnaise
5 c Combination of red and green 1/3 c Grated parmesan cheese
Tomatoes – sliced 1 Garlic clove, minced
1 1/2 ts Salt 3 tb Evaporated milk

Line pie pan with pastry rolled 1/8 inch thick, crimp edges and brush
shell with evaporated milk. Bake in preheated 450 oven for five
minutes. Remove from oven, lower oven temperature to 350

Fill shell with the tomato mixture and sprinkle with the salt and
pepper. Mix remaining ingredients and spread on tomatoes.

Bake in 350 oven for 40 minutes or until tomatoes are done.
