1 c All purpose flour 1/4 c Granulated sugar 2 tb All
purpose flour 1 Large egg, lightly beaten 1/4 ts Salt
3/4 ts Vanilla 1/2 ts Baking soda 3/4 ts Light rum 6
tb Unsalted butter, softened 1/2 c Grated coconut 1/2 c Packed light
brown sugar 1/2 c Semi-sweet chocolate chips
Preheat oven to 375 degrees. Sift the flour, salt, and baking soda
together in a bowl and set aside. In another bowl, using an electric
mixer, beat the butter, brown sugar, and granulated sugar until the
mixture is light and fluffy. Add the egg, vanilla, and rum. Beat the
mixture well. Fold in the flour mixture, coconut, and chocolate
chips. Form the cookies on a baking tray, using a small ice cream
scoop. Bake for about 8-10 minutes. Yield: 24-30 cookies.
