2 c Softened butter
2 1/2 c Powdered sugar; sifted,
-divided
4 c Flour
2 1/4 ts Vanilla; divided
2/3 c Almond paste
1/4 c Firmly packed light brown
-sugar
=AB c chopped almonds;
-toasted
Beat butter with 1 cup powdered sugar Gradually beat in flour. Bet in 2 tsp
vanilla. Cover and chill dough 30 minutes. Combine almond paste, brown
sugar almonds and remaining 1/4 tsp vanilla. Shape dough around =AB ts
almond paste mixture, completely enclosing almond paste center and forming
1-inch balls. Place on ungreased baking pans. Bake in preheated 350 F oven
15 minutes. Cool. Roll cookies in remaining 1-1/2 c powdered sugar or sift
powdered sugar over cookies.
