2 pk (10-oz) mint chocolate chips
2 1/2 c Flour
1 ts Baking soda
1/2 ts Salt
2/3 c Butter
1 c Sugar
1/2 c Brown sugar
2 Eggs
1 ts Vanilla
Melt one package of chocolate chips and set aside. Mix flour, baking soda,
and salt and set aside. Cream butter and sugars. Add eggs, vanilla, and
melted chocolate. In several additions add the flour mixture. Stir in
remaining bag of chocolate chips. Bake 8 to 10 minutes at 350 degrees F.
The cookies will look slightly underdone. Makes like two and a half dozen
or so (I don’t keep track of it).
It is important that you not add all the flour in at once, or else the
cookie dough will not hold together on the baking sheet. You’ll then have
to press the dough together with your hands and the cookies will come out
dense.
The recipe on the back of the chips made only half this amount (you had to
divide the one package of chips in two) but I didn’t see the point in that:
You’d end up making more cookies the next day anyway.
