Carrot Cake

Ingrients & Directions


2 c Flour
2 c Sugar
2 ts Baking soda
2 ts Baking powder
1 ts Salt
2 ts Cinammon
4 Eggs
1 1/2 c Applesauce
4 c Grated carrots
1 1/2 c Chopped walnuts

-ICING-
1 Stick butter, softened
8 oz Cream chese, softened
1 ts Vanilla
1/2 ts Almond extract
1 lb Powdered sugar (up to 1.5
-lbs may be needed)

cake directions: sift together dry ingredients. beat in applesauce and eggs
until well blended. stir in carrots and nuts. pour into a greased and
floured pan and bake at 350F for 50-60 minutes.

icing directions: beat first 4 ingredients until smooth. gradually beat in
powdered sugar until desired consistency.
