Ingrients & Directions
1 pk (10 ounce) chopped broccoli;
-thawed, drained
3/4 c Cottage cheese
1 lg Onion; chopped fine
4 Eggs; beaten
1/2 c Margarine; melted
1 pk Cornmeal mix; (8 oz)
Mix first 5 ingredients until thoroughly blended. Add cornbread mix
stirring until just moistened. Pour batter into 10 inch cast iron skillet
coated with vegetable spray and bake at 425-F for 30 to 35 minutes.
Yield: 10 wedges.
