1 1/4 c Flour
1/2 ts Baking soda
1/2 ts Salt
3/4 c Butter; softened
1/2 c Brown sugar; packed
1/2 c Granulated sugar
1/2 c Peanut butter
1 Egg
1 ts Vanilla
2 c Semisweet chocolate chips*
1/2 c Peanuts; coarsely chopped
* I did not add this many chocolate chips. I think I added about 6 to 8
ozs.
Combine flour, baking soda, and salt in a small bowl. Beat butter, brown
sugar, granulated sugar and peanut butter in a large mixer bowl until
creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in
chocolate chips and peanuts.
Drop dough by rounded tablespoon onto an ungreased baking sheet. Press
down slightly to flatten into 2″ circles.
Bake in a preheated 375 oven for 7 to 10 minutes or until edges are set but
centers are still soft. Let stand for 4 minutes; remove to wire racks to
cool completely.
Please note: Original recipe calls for 1/2 teaspoon of cinnamon to be
mixed in with dry ingredients. Didn’t think this would taste good, so I
excluded.
