1/4 c Butter or margarine 1 c Corn, cream-style
1 lg Onion — sweet finely 1 c Sour cream — 8 oz.
Chopped 1/2 ts Salt
1 1/2 c Corn muffin mix 1 c Cheddar cheese — 4 oz.
1 ea Egg Shredded divid
1/3 c Milk
In a skillet, melt butter over medium heat. Saute onion until tender.
Remove from the heat and set aside. In a bowl, combine muffin mix,
egg, milk and corn. Spread into a greased 9-in. baking pan. Combine
sour cream, salt and half the cheddar cheese; spread over the batter.
Sprinkle with the remaining cheese. Bake at 425 deg. for 30 minutes.
Cut into squares; serve warm. Yield: about 9 servings
