–CAKE–
1/4 c Shortening
1 c Sugar
1 Egg
1/4 ts Salt
1 ts Cinnamon
1 ts Nutmeg
1 ts Baking soda
1 c Flour
2 tb Hot water
1 ts Vanilla
1/2 c Chopped nuts
2 1/2 c Apples; pared and cubed
RUM SAUCE
1/2 c Butter
3/4 c Brown sugar
1/4 c Cream
1/2 ts Rum-flavored extract OR; 1-2
-T. rum
Cake – Cream together shortening and sugar. Add remaining cake ingredients
through apples in order listed. Mix well. Pour into greased, 9-inch round
cake pan or pie plate. Bake at 350 degrees for 45-60 minutes.
Rum Sauce – Melt butter. Add brown sugar and boil 1 minute. Add cream and
boil a few more seconds. Remove from heat and stir in rum extract or rum.
Serve cake with warm rum sauce.
