Golden Crust Zucchini Cake

Ingrients & Directions


3 c Sifted all-purpose flour
3 c Sugar
2 ts Baking powder
1 ts Baking soda
1 1/2 ts Cinnamon
1/2 ts Salt
4 Eggs
1/2 c Vegetable oil
3 c Zucchini, cut into 1″ cubes
1 c Walnuts or pecans; whole

Sift dry ingredients into large mixer bowl. Put eggs, oil and
zucchini into blender container, cover and process at Grind 3 cycles
or until finely chopped. Add to dry ingredients. Mix @ #5 until well
mixed. Stir in nuts. Pour into well greased fluted tube pan. Bake in
a preheated 350 degree oven until done, about 1 hour. Let cool 10
minutes; remove from pan and cool on wire rack.
