Strawberry Shortcake

Ingrients & Directions


1 tb Vegetable oil
1 Egg; beaten
1/3 c Maple syrup or honey
1 c Low-fat milk or soymilk
-OR- water
1 1/4 c AM Pancake & Waffle Mix
— (Multigrain)
3/4 c AM Oat Bran
1 ts Non-alum baking powder
2 c Strawberries, whole

Combine liquids then stir in mix, oat bran, and baking powder. Pour
batter into a square oiled cake pan, and bake at 350 F. for 15 to 20
minutes. Place whole strawberries in a saucepan. Stir and cook down
(sweetener may be added if desired). Serve strawberries over individual
slice of cake.
