6 Eggs
2 c Cream
Salt and pepper
2 tb Olive oil
1 c Each sliced yellow onions
1 c Sliced leeks,; white part
-only
1 c Diced ham
1 c Grated Cheddar cheese
1 tb Chopped parsley
1 tb Chopped thyme
1 9-inch pie crust, homemade
-or prepared,; blind baked
Preheat oven to 325 degrees. In a small bowl beat eggs with cream and
generously season with salt and pepper. In a medium sautJ pan heat oil and
cook onion and leeks until tender. Cool slightly and add to egg mixture
along with ham, cheese, parsley and thyme. Pour into pie shell and bake for
40 minutes or until just set.
