2/3 c Flour 1/2 c Sour cream
1/2 c Cornmeal 1 cn (8oz) cream corn
1 tb Sugar 1/2 c Shredded cheddar cheese
1 1/2 ts Baking powder 1/4 c Thinly sliced green onion
1 Egg, beaten 3 tb Sunflower kernals
Combine flour, cornmeal, sugar, and baking powder.
Combine egg, sour cream, and corn. Stir into flour mixture. Stir in
cheese and green onion.
Preheat oven to 375F.
Fill greased mini muffin cups 2/3 full. Sprinkle with sunflower seeds.
Bake about 20 minutes, until golden brown. Let cool about 2 minutes in
pan; remove and serve.
