6 oz Soft tofu
3/4 c Rice or soy milk
1 pn Salt
6 tb Cocoa powder; preferably
-Dutch
1/2 c Sugar; (plus 2 tbsp)
2 oz Semi-sweet chocolate; finely
-chopped
In a blender, combine tofu and rice milk and blend until creamy. Add salt,
cocoa, and sugar, and blend until smooth. Pour mixture into a medium
saucepan and cook over medium heat, stirring continuously, until hot, but
not boiling. Remove from heat, add chopped chocolate, and stir until
chocolate is completely melted.
