1 1/2 c Reduced-fat biscuit/baking
-mix
1 c Puffed rice cersal
1/3 c Finely chopped banana
1/2 c Shredded peeled apple
1 3/8 c Raisins
2 tb Pine nuts; toasted
1 lg Egg
3/4 c Skim milk
1/2 ts Vanilla
In a bowl, combine bakinf mix, cereal, banana, aoole, raisins and pine
nuts. In another bowl, beat egg, milk and vanilla; stir into dry
ingredients just unti moistened. Pour batter by 1/4 cupfuls onto a lightly
greased hot griddle; turn when bubbles form on top of pancakes. Cook until
second side is golden brown. Serve immediately. Yield
: 10 pancakes. Serving size- 2 pancakes.
