Ingrients & Directions
3/4 c Flour
1/2 c Rolled oats
1/4 c Packed brown sugar
1/2 c Butter; softened
1/2 c Chopped pecans
14 oz Canned pumpkin
300 ml Eagle Brand Low Fat Milk
2 Eggs; beaten
1 ts Ginger
1 ts Cinnamon
1/2 c Coconut; optional
Combine flour, oats and sugar. Cut in butter till crumbly. Stir in
pecans. Press into 9″ square baking dish. Bake at 350 for 15 minutes.
Combine remaining ingredients,except coconut. Pour over base. Sprinkle
with coconut. Return to oven and bake another 25 – 30 minutes or until set.
Serve warm or chilled.
