1 c Shortening
1 c Sugar
2 ts Ginger, ground
1/2 ts Salt
1 Egg; beaten
1 ts Soda
1 c Molasses, dark
2 1/2 c Flour, all-purpose; divided
Cream shortening, sugar, ginger, and salt. Add egg; mix well.
Combine soda and molasses; stir well until frothy, and add to creamed
mixture. Add 2 cups flour; turn onto a floured board and add enough
of the remaining flour to make a dough that can be rolled.
Using a small amount of dough at a time, roll to 1/8″ thickness; cut
with a floured 3″ cutter. Place on greased baking sheets; bake at
375 degrees for 15 minutes. These cookies keep well in a covered
container.
