1 tb Lemon juice
7 1/2 c Fresh strawberries; sliced
-and divided
1/4 c Sugar (I tried subst 6-7
-packets of Equal)
1 1/2 ts Unflavored gelatin
3 tb Cold water
3/4 c Frozen strawberry daiquiri
-fruitjuice concentrate;
-thawed
3 tb Cornstarch
1/4 c Water

Position knife blade in a food processor bowl; add 1 1/2 cups of
strawberries. Process until smooth. Toss remaining strawberries with sugar
(or Equal) in a large bowl. Sprinkle gelatin over 3 T cold water in a
medium saucepan; let stand 1 minute. Add pureed strawberries, fruitjuice
concentrate, and lemon juice; cook over medium heat until gelatin
dissolves. Combine conrstarch and 1/4 cup of water, stirring until smooth;
add to gelatin mixture. Cook over medium heat 2 minutes or until thickened
and glossy, stirring constantly; cool slightly. Stir pureed strawberry
mixture into large bowl of strawberry-sugar mixture. Sppon mixture into pie
crust. Cover and chill in fridge for at least 4 hours.
