3 c Sifted flour -substitute)
2 t Baking powder 1 c Milk
1 ea 1 /2 teaspoons salt 8 t Grated lime rind
3 1/2 c Sugar 2 c Chopped pecans
1 c Unsalted butter or margarine 6 T Lime juice
4 ea Eggs (or 1 cup egg
Method: Sift flour, baking powder and salt. Cream 2 cups sugar with
butter; beat in eggs. Add flour mixture and milk alternately, beating
after each addition. Stir in rind and nuts. Turn into greased tube
pan. Bake at 350′ till done, about 1 hour. Remove cake from pan as
soon as baked. In small pan, stir and cook remaining 1 1/2 cups
sugar and juice till sugar is dissolved. A little at a time, pour
over cake till all glaze is absorbed. Cool and slice.
