Salt Rising Bread #2

Ingrients & Directions


1/3 c Scalded; cooled milk
2 tb Corn meal
1 c Scalded milk
1/2 ts Salt
2 tb Molasses
3 tb Oil
1 c Whole wheat flour
2 c Flour; about

Mix together 1/3 C scalded, cooled milk and 2 Tbl corn meal. Let stand,
covered, in a warm place for 24 hours. It should be bubbly. Stir
together: 1 C scalded milk 1/2 tsp salt 2 Tbl molasses 3 Tbl oil 1 C whole
wheat flour Add corn meal mixture. Stir in enough white flour to knead,
about 2 1/2 C. Knead about 5 minutes. Form one loaf and grease the top.
Place in a greased loaf pan. cover, let rise until double. Time required
will vary. Bake at 375 deg for about 35 min.
