9 oz Frozen spinach; thawed and
-drained
1/2 c Scallions; chopped
1/2 c Cottage cheese
1 tb Unsalted butter
1 c Milk
1/2 c Buttermilk baking mix
3 Eggs
1 ts Lemon juice
1/4 ts Nutmeg
3 tb Grated Parmesan cheese
Prep: 10 min, Cook: 40 min.
Preheat oven to 350?F. Layer spinach, scallions and cottage cheese in a
greased baking dish. Combine remaining ingredients in a food processor or
blender. Season with salt and pepper to taste. Blend until smooth and pour
over cheese mixture. Bake 35-45 minutes, or until a knife inserted in
center comes out clean.
