Chocolate Strawberry Shortcake

Ingrients & Directions


-WASHINGTON POST-

FOR THE SHORTCAKE
1 2/3 c All purpose flour
1 1/2 t Baking powder
3 tb Unsweetened cocoa powder
1/4 t Salt
1/3 c Sugar
1/2 t Baking soda
4 tb Unsalted butter,cold and cut
1 x Into 4 pieces
1/2 c Chocolate chips,about 3 ozs.
3/4 c Buttermilk

-FOR THE FILLING-
2 pt Boxs fresh strawberries
1/2 c Sugar
2 c Heavy whipping cream
4 tb Confectioners’ sugar

———————–FOR THE HOT FUDGE SAUCE———————–
6 oz Semisweet chocolate
14 oz Can sweetened condensed milk
1 t Vanilla
1 x Pinch of salt

To make shortcake: Combine flour,baking
powder,cocoa,salt,sugar,and baking soda in food
processor fitted with metal blade,or in medium sized
bowl with pastry blender or finger tips until well
blended.Add butter and process on and off or mix until
mixture is consistancy of coarse meal.Add chocolate
chips and buttermilk and mix just until dry
ingredients are moistened and dough begins to hold
together.Do not process into a ball.Turn out on well
flowered board;dough will be stickey.Knead about 10
times and pat into 7″ circle,3/4″ thick.Dough should
feel moist…
Cut out 8 biscuits with floured 2″ round biscuit
cutter.Place biscuits on ungreased baking
sheet.Lightly flour board.Combine leftover pieces of
dough and pat them back to 3/4″ thick circle.Cut out 4
more biscuits and transfer them to cookie sheet.
Bake them in a preheated 450 deg.oven for 12
minutes only.They should have risen slightly and look
dry on top..
To make filling: Hull and quarter
strawberries.Place in a bowl and toss with sugar.Let
stand at least 30 minutes or up to 4 hours..
Whip cream with electric mixer on low speed until
thick.Add confectioners’ sugar and beat on high speed
until soft peaks form…
For the fudge sauce,melt the chocolate,condensed
milk,vanilla and salt with 2/3 cup of water in a heavy
medium size saucepan over low heat,stirring constantly
until mixture comes to a full boil.Whisk over moderate
heat until thickened,about 3 to 5 minutes.
To assemble,cut biscuits in 1/2 horizontally and
place 2 to 3 halves on each plate.Top with
strawberries,a heaping tbs.of fudge sauce,whipped
cream and drizzle more sauce over all……… FRom
