Pineapple Bread Pudding

Ingrients & Directions


1/2 c Margarine; softened 1 cn Crushed pineapple; well
-=OR=- -well drained
1/2 c Butter softened 2 c 1/2″ bread cubes; (about 3
1 c Sugar; -slices
1/2 ts Ground cinnamon; 1/4 c Pecans; chopped
4 Eggs;

Heat oven to 325 degrees; in large mixer bowl, beat margarine, sugar
and cinnamon on medium speed 1 minute, scraping bowl constantly. Add
eggs, scraping occasionally; beat on high speed until mixture is
light and fluffy, 2 minutes. Fold in pineapple, bread cubes and
pecans. Pour into greased 1-1/2 quart casserole. Bake until knife
inserted in center corners out clean, 40 to 45 minutes.
