Mocha-nut Pudding Cake

Ingrients & Directions


1 c Flour 3/4 c Light brown sugar;
3/4 c Granulated sugar -packed
1/4 c (+ 3 tbs) unsweetened 3/4 c Walnuts or pecans;
-cocoa powder -chopped
2 ts Baking powder 1 3/4 c Coffee; very hot
1/4 ts Salt -brewed
1/2 c Milk Vanilla ice cream or
2 tb Butter; melted -whipped cream
1 ts Vanilla extract

Preparation Time: 0:45 1. Preheat oven to 350F. In a medium bowl,
combine flour, granulated sugar, 3 Tbs cocoa, baking powder, and
salt; mix to blend. Stir in milk, butter, and vanilla, blending well.
Scrape batter into a buttered 9-inch square baking pan and spread
evenly. 2. In a medium bowl, mix together brown sugar, walnuts, and
remaining 1/4 cup cocoa. Sprinkle over batter in pan. Gently pour hot
coffee evenly over all. 3. Bake 35 to 40 mins, or until cake is firm
to the touch. Let cool slightly. Cut into squares and serve with
sauce from bottom of pan. Top with vanilla ice cream or whipped cream.
