1 c Red plums; drained (chop
-plums into quarters;
-reserve liquid)
2 c Flour
2 ts Baking powder
1/2 ts Salt
1/2 ts Baking soda
1 ts Cinnamon
1 ts Nutmeg
1/2 ts Cloves
1/2 c Shortening
1 c Sugar
2 Eggs; well beaten
1/2 c Red plum liquid
1/2 c Chopped nuts (optional)
Sift flour and dry ingredients together. Cream shortening with sugar; add
eggs and beat thoroughly. Add dry ingredients and beat well. Fold in plums,
plum liquid and nuts. Pour into cake pan approximately 7×11-inches. Bake at
375 degrees for about
35 minutes.
Cream Cheese Frosting: Beat 3 ounces cream cheese, softened. Add 2
teaspoons plum liquid and 1-1/2 cups powdered sugar.
