2 c Cornmeal
1 ts Salt
2 c Boiling water
1/4 c Milk
Vegetable oil or
-clarified butter for
-cooking
Mix cornmeal, salt and boiling water and let stand for 5 minutes. Stir in
milk. Fry 2 1/2- inch cakes on a medium hot well oiled skillet until
browned on both sides.
Yield: 12 cake
