1 lb Fine oatmeal
1 lb Flour
1 lb Demerara su
2 oz Candied peel
3/4 lb Butter
2 ts Baking powder
1 ts Ground ginger
1 ts Coriander seeds
1 ts Salt
1 lb Warmed black treacle
Set oven to 350/F or Mark 4. Mix all the dry ingredients together in
a bowl, rub in the butter and add the treacle. Knead together and
roll out fairly thinly on a floured sur face. Cut into large rounds,
place on a greased baking tray and bake until golden; about 20
minutes. The actual cooking time depends on the thickness and the
size of the cakes.
