Three Layer Cocoa Cake

Ingrients & Directions


1 1/2 c Coffee, brewed, hot 2 ts Vanilla extract
1 c Boiling water 3 c Flour
1 1/4 c Unsweetened cocoa powder 2 ts Baking soda
— firmly packed 2 ts Baking powder
1 c Corn oil 1/2 ts Salt
2 1/2 c Sugar Orange cocoa cream cheese
4 Eggs -frosting

Preparation Time: 1:00 1. Preheat oven to 350F. Grease three 9-inch
round cake pans. Dust with flour; tap out excess. 2. In a medium
bowl, pour hot coffee and boiling water over cocoa. Whisk or stir to
combine; set aside to cool. 3. In a large bowl, beat together oil and
sugar with an electric mixer on low speed until well blended, 1 to 2
mins. Add eggs and vanilla; beat on medium speed 30 secs. 4. Sift
flour with baking soda, baking powder, and salt. With mixer on low
speed, alternately add flour mixture and chocolate liquid to oil
mixture, beating until just combined. Scrape batter into prepared
pans and spread evenly. 5. Bake 30 to 35 mins, or until a cake tester
inserted into center comes out clean. Let cakes cool in pans 10 to 15
mins, then unmold onto racks and let cool completely. 6. Stack cooled
cake layers and fill with about half of Orange Cocoa Cream Cheese
Frosting in between. Cover top and sides of cake with remaining
frosting.
