1 c Cooked great northern or
Pinto beans
2 lg Eggs
1 c Butter or margarine
1 c Packed brown sugar
1 c Light Corn syrup
1 ts Vanilla extract
1 ts Ground nutmeg
Currants
24 Prepared 3-inch tart shells
Mash or puree beans. Beat eggs; add to beans. Add the next five
ingredients and beat well. Place a few currants in each shell. Pour
in the filling. Bake at 350′ for 20 minutes or until nicely brown.
(Variations: Maple flavoring can be substituted for vanilla extract,
and pecans or walnut for currants.)
Yield: 2 dozen tarts or 1 pie
