1/2 c Unsalted butter; room temp
1/2 c Sugar
1 Egg yolk
1/4 c Fresh lemon juice
1 1/2 ts Grated lemon rind
pn Salt
14 tb All-purpose flour; sifted
Powdered sugar
Recipe by: Cooking with Bon Appetit – Cookies Preheat oven to 375F.
Grease baking sheets. Using electric mixer, cream butter and 1/2 cup
sugar until light and fluffy. Mix in yolk, then lemon juice, lemon
peel, and salt. Fold in flour. Drop batter by teaspoonfuls onto
prepared sheets, spacing 2 inches apart. Bake until edges of cookies
begin to brown, about 10 minutes. Cool slightly on baking sheets.
Transfer to rack. dust with powdered sugar and cool. Store in
airtight container.
Makes about 3 dozen.
